Birria has become one of the most-requested formats on the Strip. The problem is that most of what you find in Las Vegas is either off-Strip, inside a full sit-down restaurant with a long wait, or a food truck that is somewhere different every night.
Rock N' Potato at Showcase Mall is the only restaurant on the Las Vegas Strip serving birria fries. It is on the second floor of the mall, counter service, no reservation, open until 1am on weekends. The birria fries are $14.95. If you are on the Strip and you want birria fries tonight, this is where you go.
What makes birria fries at Rock N' Potato
The build is straightforward: hand-cut fries, braised birria beef, and consomme sauce poured over the top. The consomme is not a side thought -- it is part of the dish, soaking into the fries and bringing the braised beef flavor through every bite. At $14.95, this is a full plate. Not a snack, not a side.
If you want to go deeper, the consomme add-on ($3.00) gives you a small bowl of birria broth alongside the fries for dipping. Traditional birria is served with consomme for a reason: the broth is rich, spiced, and built from the same braising liquid as the beef. If you have never dipped birria into consomme, the $3.00 add-on is worth it your first time through.
The fries are hand-cut in-house. That matters for a loaded fry: a thicker, cut-to-order fry holds up under braised beef and sauce where a frozen fry turns to mush. The structural integrity is part of the dish working as intended.
The full birria program
The fries are the entry point, but Rock N' Potato runs a complete birria program. If you are coming specifically for birria, you have four options to work with.
Birria Tacos $10.95
Three braised beef birria tacos at $10.95. For a full guide to birria tacos on the Las Vegas Strip, we cover the format in detail -- the short version is that this is a clean, properly built birria taco at a price that is hard to find on the Strip. Order the consomme add-on if you are going this route.
Birria King $16.95
This is the birria-loaded potato: a baked Idaho potato built around braised birria beef. Rock N' Potato's core identity is the loaded baked potato, and the Birria King is what happens when the birria beef replaces the traditional toppings as the main event. At $16.95, it is $2.00 more than the fries and it is a noticeably bigger plate. If you are eating one thing and want to be full, this is the order.
Chilaquiles Birria $12.95
Birria chilaquiles, available for breakfast and brunch. The kitchen opens at 8:00am, which means birria is on the menu earlier than almost anywhere else on the Strip. Chilaquiles Birria at $12.95 makes Rock N' Potato a legitimate birria destination for the morning crowd -- a category where there is essentially no competition on the Strip.
Between the fries, the tacos, the loaded potato, and the breakfast chilaquiles, this is a complete birria destination. Not a birria item tucked into the corner of a larger menu -- a kitchen that is running the format across multiple dayparts and build styles.
Where to find it on the Strip
Rock N' Potato is inside Showcase Mall at 3785 S Las Vegas Blvd, Suite 207. Showcase Mall is on the Strip between MGM Grand and the Cosmopolitan, directly adjacent to M&M World. The entrance is off Las Vegas Blvd; take the escalator up to the second floor food court. Suite 207 is the Rock N' Potato counter. There is no host stand, no wait list, and no dress code. Walk up and order.
Hours are Monday through Thursday, 8:00am to 11:30pm. Friday through Sunday, 8:00am to 1:00am. The late-night hours on weekends are a meaningful advantage: most sit-down restaurants near this stretch of the Strip stop seating well before 1:00am, and birria at midnight on a Saturday is not a thing you can do most places on Las Vegas Blvd.
