DEF CON runs Thursday through Sunday, so the overlap is: Thursday and the weekdays before it close at 11:30pm, Friday through Sunday close at 1:00am. Birria Smashburger $15.95
A smash-pressed burger with birria-braised Angus beef, Monterey Jack, and consomme on the side. The format is familiar, the build is not. This is the order when you want something more substantial between morning sessions and an afternoon that stretches into evening.
Wings $10.95
Buffalo, Garlic Parmesan, or Mango Habanero. Wings are made for the group table: fast, shareable, and easy to finish before someone at the table needs to run back to the floor. Order a round, eat together, leave when you need to. Nobody is waiting on a check.

Hours and what to know before you go
DEF CON runs August 6 through 9. The conference opens Thursday, August 6. Rock N' Potato hours for each day of the conference:
Thursday, August 7 and any weeknight: open 8:00am to 11:30pm. If your evening sessions run past 11pm, the kitchen is closing around that time. Plan the rideshare to arrive before 11:15pm if you are cutting it close on a weeknight.
Friday, August 8 and Saturday, August 9: open 8:00am to 1:00am. Late-night options are fully available on the two closing days of the conference. Post-session crowds heading back to the Strip have two hours more than weeknight visitors.
