DEF CON 35 follows directly after Black Hat USA in the same Las Vegas convention corridor in early August. If you are one of the many security professionals attending both events back to back, Rock N' Potato is open for both conference weeks. Getting from LVCC to the Strip
The Las Vegas Convention Center sits on Paradise Rd, a short rideshare from the main Strip corridor. Showcase Mall is at 3785 S Las Vegas Blvd, right on the Strip between MGM Grand and the Cosmopolitan. For attendees staying on the Strip, that is already your home base. For attendees coming off the convention floor, it is a quick rideshare into the middle of everything.
Rock N' Potato is on the second floor of Showcase Mall, Suite 207. Take the escalator up from Las Vegas Blvd, next to M&M World. Counter service means you order at the front, take your number, and sit down. No waitstaff, no check, no minimum time commitment. You are done when you are done.

Why counter service is the right format for DEF CON
Conference schedules do not leave much room for sit-down dining. A talk runs long, a village conversation goes deeper than expected, and suddenly the window for lunch is thirty minutes. Sit-down restaurants near the Strip on a busy August week carry real wait times. Counter service skips all of that: you walk in, you order, you eat, you leave. No reservation to cancel if a session runs long, no server to flag down when you need the check.
Groups are easier too. Conference groups tend to be fluid, with people joining from different sessions at different times. Counter service lets everyone order independently at the same counter and settle at the same table. No split-check math, no waiting for the slowest person to finish before everyone can go.
Rock N' Potato is open from 8:00am every day, which covers breakfast before the first sessions. Monday through Thursday hours run until 11:30pm. Friday through Sunday hours run until 1:00am. DEF CON 35 runs Thursday through Sunday, so the overlap is: Thursday closes at 11:30pm, Friday through Sunday close at 1:00am. If your sessions run very late on Thursday, confirm the 11:30pm close before making the trip. The weekend nights have more room.

Original Groupie $10.95
The entry point on the menu, and one of the better $10.95 meals on the Strip. A loaded baked potato with the core build: butter, sour cream, cheddar, chives. Clean and quick. If you want a real meal without spending much or thinking about it, this is the straightforward call.
Birria Smashburger $15.95
A smash-pressed burger with birria-braised Angus beef, Monterey Jack, and consomme on the side. The format is familiar, the build is not. This is the order when you want something more substantial between morning sessions and an afternoon that stretches into evening.
Wings $10.95
Buffalo, Garlic Parmesan, or Mango Habanero. Wings are made for the group table: fast, shareable, and easy to finish before someone at the table needs to run back to the floor. Order a round, eat together, leave when you need to. Nobody is waiting on a check.
Cheese Fries $8.95
The side order that doubles as a meal when the schedule is tight. A shared order of cheese fries alongside something from the counter is the efficient group lunch. Under $10, on the table fast, and nobody is still eating when the next session starts.

DEF CON 35 runs August 5 through 8, 2027. The conference opens Thursday, August 5. Rock N' Potato hours for each day of the conference:
Thursday, August 5: open 8:00am to 11:30pm. If your evening sessions run past 11pm, the kitchen is closing around that time. Plan the rideshare to arrive before 11:15pm if you are cutting it close on Thursday night.
Friday, August 6, Saturday, August 7, and Sunday, August 8: open 8:00am to 1:00am. Late-night options are fully available on the three closing days of the conference. Post-session crowds heading back to the Strip have two hours more than the Thursday window.
No reservation required on any day. Walk up, order at the counter, pay, sit down. That is the system.
